“Usually what’s used for thatching is what’s close to hand or cheap or easy to use and in Yorkshire that would have been wheat straw. It’s quite important to keep straw because there’s so much behind it with the farming side of it, the husbandry. You can’t read in a book how to grow the old varieties of wheat, how to look after them and process the straw, it’s something that’s passed on.”
